The ONLY TIME I've ever upgraded my OS and got a performance boost was way back when Snow Leopard was released.
I guess newer OS's have more features and therefore run more processes or whatever... How much of a performance hit would I take by upgrading this iMac?

I have a similar machine but it has half of the RAM. Still runs great on Ventura with no significant performance impact. I don't run demanding apps on a daily basis though. The only thing noticeable is it takes 20s to launch my 9 autostart apps after login.
 
A VERY important question:
What kind of drive is in the iMac?

Unless it's an SSD, it might very well slow down.
If it's a platter-based HDD, the answer is almost certainly, "yes" (it will slow down).
 
In case you’re interested, 11.7.6 was recently released. The updates fixes some kind of exploit.
