As the title says, if Apple had updated the MacBook with a Sandy Bridge Core i3/Intel HD 3000 in place of the Core 2 Duo/NVIDIA 320M, and added a Thunderbolt port, would you have bought it?
Personally, I would've considered returning/selling off my i5 13" MacBook Pro to get an i3 MacBook to have a couple hundred dollars back in my pocket for the next iPhone.

An updated Macbook of any type would've been nice. Especially as the 11" Macbook Air isn't a direct replacement (too small, no upgrade options after purchase).

Yes I would've bought it!

Right. The MacBook Air is small and thin, but it's not practical, and not easily upgradeable. With a MacBook, you can always add more RAM, swap an SSD/HDD. Heck, even Optibay it if need be.
