My new router has the more secure option to set as the WPA3 Personal encryption.

By on my iPhone 13 mini, it’s connected to my new router but how can I know it’s using WPA3?

I don't think Apple gives you a way to display it. However iOS does warn you if connect to an SSID running an insecure wireless security protocol. One of the SSIDs at work had been mistakenly set to WPA2/TKIP instead of WPA2/AES, and my iPhone noted "Weak Security" (under the SSID in wireless settings) until the configuration error had been corrected.
