hi, say I have a windows folder shared on the local network, If I allow the write permission, and have mac computer access it, will it create those invisible ._ files?

2: what will happen if I use mac to delete one of the files in that shared folder, where will it go? (as I understand it, windows and mac store trash items differently)

The answer to your first question depends a bit on the OS and settings on either end, but yes, you'll get .DS_Store files and in some cases ._ files.

If you don't want to configure Windows clients to hide those files (which I believe they do by default now), you can set a default on the Mac that will tell it not to write .DS_Store files. This also speeds up browsing, at the cost of not remembering window settings.

If that isn't doing what you want, there are a variety of other ways on both ends to prevent their creation or automatically remove them; a popular (but not free) one is BlueHarvest.

Your delete question is much easier: The file will go nowhere. The macOS deletes files on network volumes immediately; Trash is only used for local storage. There will be a warning to this effect every time you delete something on a network volume.

I actually thought Windows did the same with network volumes, but maybe I'm remembering that wrong.
