I've notice that a few apps display the wrong day and sometimes timezone for events. I'm referring mainly to sports apps usually showing the correct time of day, but one day off.

I am in Tokyo, Japan and a couple of examples are: Yahoo sports. It shows the correct start time in local (Tokyo) time, but a day early. Another app that does this is the FIFA World Cup app.

Are there some settings on my iPhone that I should be changing or are these all app related issues?

Sounds like because you're so far ahead of U.S./European time zones if it's consistent. It might be worth emailing the app developer and see what they say.
