Okay so basically what happened was that my mom ordered an iphone just for me, but she made a mistake of changing the phone number of the phone from mine to hers. So now on the shipping confirmation it says- With the following plan: her number. How would I go about changing this to my number now?

Activate it under your number with your SIM card. Easy as pie. The SIM dictates whos number is on the device, as long as you use a SIM with your number you are ok.
 
Just go to an AT&T store if you have issues. They can fix it. Though you may want to wait a day or so...
 
you might have to call at&t because it is a microsim for the iphone 4....shouldnt but much of a hassle though
 
You could also just take your current SIM and cut it to micro-SIM size with the micro-SIM delivered with the iPhone as a template. You can then go get a few new SIMs at AT&T once everything dies down. They might charge you $6 or so, but I'd gladly pay a few bucks to avoid waiting on the phone for an hour.
