does XCode 4 include Shark?

Xcode 4 does not include Shark. Instruments is the replacement for Shark.

Thanks! Do you know if the new Instruments has a cache miss profiler?

There is an instrument that records Core Data cache misses, but I don't see any other instruments that profile cache misses. Instruments does let you create your own instruments with DTrace.

You can also download the CHUD tools from connect.apple.com. Shark is part of the CHUD tools. I don't know how well Shark works with Xcode 4.

You'll need to continue using Shark for things like cache miss profiling. Instruments is... getting better, but not there yet.
