Well if you LISTENED, you'd know that the album art is only displayed where it won't take up extra space. In simpler terms, when you have more than 5 songs by an artist.

You can force it to show artwork:
View -> Always Show Artwork

I too had an initial panic over this. All is well. Start iTunes and click on the "Album By Artist" section of the toolbar. It will fix things right up for you.
