Right now, I'd have to say Spaces.
Second on the list would be all the 'under the hood' stuff, because the UI stuff is mostly garbage this go 'round. (I guess the UI team was too busy working on iPhone to make Stacks useful or to keep Finder from being dumbed down even more.)
