Your Macbook Pro's display has a 16:10 aspect ratio. 720p and 1080p are 16:9 ratio which is a bit wider, thus the black bars.

You could run Minecraft in a 720p or 1080p sized window and capture just that portion of your screen, rather than capturing the whole screen.

Do you know any screen recording programs that are good for games? I am using ScreenFlow and you can only crop out parts of the window that you don't want after you record the video.
