I have a pre-unibody 2.5ghz MBP with the GeForce 8600M GT video card.

I'm attempting to use a DVI-I to DVI-D & VGA cable to send signals to my projectors via VGA and the house video system via HDMI.

Does this card allow you to use both the digital and analog signals simultaneously for additional monitors/projectors?

Thanks for any help.

The DVI standard itself does only export one signal, which can be either digital or analog. The DVI in the pre Unibody MBP has support for analog signals, so that won't be the problem.
Anyway, you can only get one signal out of the card, to be exact you can't run two display devices with different contents.

What you can try is a DVI splitter with one DVI input and two outputs and attach a VGA and a HDMI adapter to them.
Of course both outputs will display the same content.
I can't guarantee that it will work, but you could give it a try.
