Assuming that's a gift card for the iTunes/App Store and not just a standard gift card:

1. Sell the card to someone else for face value.

2. Buy an Apple TV with the cash.

It can't be used to buy anything on the Apple Store, such as Macs, Apple TVs, iPhones, iPads, etc.

The Back to School Gift Card may be used on the Mac App Store, the iTunes Store, the App Store, and the iBookstore.

I was hoping there was a way to use this card via itunes and the easyPay app to buy the appletv.

Nope, your best bet is to sell it and use the cash towards the apple tv.

Perhaps redeem the voucher on iTunes and then use the money you save by not having to 'buy' content towards your purchase.
