A 4K screen can't create image data where none exists.

The 4K machines benefit from beefier GPU's though, that's where any performance increases would come from.

So if you had a 4K iMac and a 2K iMac side-by-side playing the same Blu-Ray movie, both screens would look identical?

I thought the 4K iMac had better colors. No?
 
Yes the 4k screens have a higher color gamut and were improved in almost every way compared to the older 2k screen. The 2k screen would still look good but theres no denying the 4k screen would be superior. If you're concerned and asking the question you would notice the difference. It goes without saying, but ill say it anyway, resolution is one small aspect of an image quality.
 
The 4k iMac will "look" and run better. Noticeably so.

But having said that, for 1080p, the 2k iMac should still do "ok"...
 
As others already have rightly stated, the 4k screen will look better regardless of what is being viewed on it due to the technical spec of the display itself. The 2k screens can still look good, but side by side you'll know which is which even with the same video playing in 2k.

There are a few things involved in looking at 720 or 1080 resolution media on higher resolution screens.

Apples do a very good job of upscaling/upconverting lower resolution material. Depending on how far away you sit looking at a screen will determine how much you will notice the difference between 2k and 4k. The closer you sit, the more one sees the difference. The entire appearance is more than just a "good monitor" but what drives the monitor and what data is being sent to the monitor.
