1080p if you want to save space, otherwise 4K if you have a 4k device to view them on or want to be future proof for when you do
 
What kind of video files should I do ?

To me, recording videos on your iPhone or iPad in 1080p 60fps is a lot better than recording them in 4K. If what you're recording doesn't require you to move the camera much, 4K is fine. If you're moving around a lot and want a smoother video, use 1080p 60fps. My opinion anyway. Test it out. Picture looks the same. Smoothness is impressive.
