I was on the beta too. I deleted the beta profile and was able to update. After deleting the profile it will show an update but for some reason it says 12 instead of 12.1 but after installing under about phone it shows its on 12.1 not 12.
More or less what Buckeye2009 wrote. I've a few devices that were on the latest beta. Delete the Profile, shut down the device, power up the device, Software Update. Worked on an iP6S, 1st Gen iPP, Air 2, S Max.

On my iPhone XS max - I uninstalled the profile and downloaded the 12.1. After that I reinstalled the beta profile and now it’s asking me to download and install iOS 12.1 Beta 5. So is the public release a lower build than 12.1 Beta 5. 12.1 Final Release I have installed says Build 16B92.
Exactly. Unless you (anyone reading) plans to stop getting betas you might as well wait for the next update to hit which is never too far behind the previous release. Beta 5 likely has everything public 12.1 has.
