If you have access to a X/XS/11Pro with iOS14 (which added the display zoom option for those models), you can try display zoom there. The result should be the same as on the 12 mini, as they share the same logical resolution (that’s why those models got the option with iOS14).
I checked on my daughter’s XS and it retains all 6 rows of apps on the Home Screen when in zoomed mode. That said, the zoom looks less pronounced to me than it did on the 12 Pro (which I have already returned).
The 12 Pro is a different layout category than the X/.../mini, so a difference in zoom is not unexpected.
Right. I’m worried that the 12 mini will feel too small/cramped for me (I currently have the se 2020 and make SO many typos). I think I’ll order and give it a try...

The mini will look exactly the same as your 11 Pro in terms of screen contents (except for the notch “ears”), as they use the same logical resolution.
