Will it hurt my battery to charge my iPhone 12 Pro Max your night? I know it’s a fast charger that I’m using so I’m not sure if it hurts the battery to leave it charging overnight. Thanks!

While you're charging overnight, it's day on the other side of the planet. So everything is ok.

Use a diet charger for over night. Not the fast one. Your battery will thank you. And also not drop in health as quickly.
