I'm playing RollerCoaster Tycoon via Windows XP on Parallels Desktop 5. The game is from the late 90'ies, but it's very choppy. I've played it for months without trouble, but a couple of hours ago, it started being almost unplayable.

Any ideas?

Probably something going on in the background. Have you installed anything recently? Tried a reboot?

Just as a side note, just because the game is old doesn't mean it will run smooth. There is a combat flight simulator called Falcon 4.0 (1998) that you will struggle to run on max settings on most machines 12 years on.
