Ok I really don't want to get 16/512 - I already have a primary iMac. So if I'm going to spend the money, am I better going for extra SSD or memory?
 
Wait a month, and let the hardware revisions of the minor parts sort themselves out, then buy 16/512 and be happy with it for the next 10+ years.

Since you already have an iMac, get the base config on the M2 as it is more than enough for what you mentioned earlier. The forum got you scared for no real reason. Don't overthink the obvious.
 
Two questions that should help you out -
How long do you plan to use this computer and should it be future-proof?
and
Which one is upgradable - drive space or RAM? (hint - external fast SSD)
