Which setting captures more photo information and results in better overall photos? I’m on vacation and want to make sure my 11 Pro captures images at its best and I want to make sure I have the right setting selected

Same question here. I've been leaving it on 4:3, but now that I think about it I should probably switch to 16:9 since I can't remember the last time I had photos printed. 16:9 looks better on the phone and when mirroring to my TV.

16:9 is just cropped up 4:3, id leave it on the later and edit it for whatever ratio you want in post.

16:9 finally! Can you view photos full screen on the Macbook. They look really good.

I noticed that only 4:3 saves photos as HEIC while 16:9 saves as jpeg. What is the reason for this?

Maybe because 16:9 is post-processed version. Native aspect ratio of the sensor is 4:3, but I guess Apple could’ve saved it back as HEIC.
