My macbook pro keeps connecting/disconnecting from power every 2-3 seconds, and chimes under this scenario:

1) Shutdown MacOS while on battery
2) Close Lid
3) Plug into power while closed

-It continuously chimes every 2-3 seconds and the light on the power brick turns orange-off-orange-off etc. I have to open the lid, and the shutdown again for it to stop and charge normally.

Does this have anything to do with using a power adapter extension cable you were discussing on a another thread, after a week's usage of your new 16"?

The fact that the power adapter is turning orange-off-orange-off leads one to speculate you have something AC wise amiss. Check with Apple store staff about that adapter maybe not working correctly when charging.
