If you can afford the $400 increase in price, go for it.
I have 16GB on my 16", I had to buy it to WFH and couldn't wait for the BTO configuration. Found a really good deal on the 8 core model and got it. I have a really good machine and memory pressure is usually low, but sometimes I see 1 or 2GB of swap being used.
If I had time to configure the laptop and wait for the longer delivery I'd upgraded to 32 and to keep the cost down I'd have picked the slower CPU.

I initially bought a refurb 2.4/32GB/2TB/8GB machine and then realised the CPU difference between the 2.4 and 2.3 was negligable. I then found a 2.3/64GB/2TB/8GB for ~£100 more so did a swap. Yes, 64GB is bonkers, but I run VMs, and this is my mobile lab effectively. I also hope this will last me ~5 years like the 2014 13" it replaced and I figured RAM would be more constraining in the future, than a few MHZ of CPU
 
16GB is enough IMHO. Get a refurbished from Apple, great way to save money 👍
Agreed. Remember, most notebooks Apple will sell in 2020 will have 8GB of RAM. 16GB will be plenty for the vast majority of users.
