Something to think about is that video recording is going to consume a lot of space, and if you JB then downloading movies from YouTube will also consume space. In all I never exceeded a gig of official apps so you have to figure out how much space you need. I do know that my 8GB filled up in an awful hurry.
If you're interested in something like the TomTom app, realize that it's going to need a few GB of space for map data. I went with the 32GB model as I see app sizes increasing as more space becomes available.
It's always better to go over than under. My original iPhone 8GB is packed now to the point I can't update. I know I need 16GB but wondering if 32GB is really needed as well. I feel that being financially tight will be the ultimate reason.

Yes. I had an 8GB, and I had around 4.4GB left. I had over 300 songs, pictures, no videos, and a few video games. I couldn't even fill up an 8GB, so its pointless for me to get a 32GB...no way I could use all of it up.
