So everyone that I know that has an Iphone has a folder called junk or trash for the apps you cant get rid of on the screen.

What do you call yours?

I don't have one. With iOS 7 folders can now have multiple pages so I simply hide the junk on the second page of my "apps" folder that I use for apps I download.
 
iPoop

I have an "iPoop" folder for all of the Apple default apps that i do not use.

Here are my two "iPoop" folders from my iPhone 5c and iPod touch 4.

Just folders for different types of apps where the different apps go (like "Photography" or "Games" or "Utilities" or "Entertainment", etc., etc., etc.) that I keep beyond the first page (well, beyond the first two pages as I have my most used apps on those).
 
I have a "unused" apps folder for the built in apps that I do not use -- I placed it on the its own page and I never scroll to it..

Apps I dont use:
- Weather (I check weather in the notification center or use the Yahoo Weather! app as its got nicer UI vs stock app despite being provided by yahoo)
- Contacts -- I use the phone app --- never find the need to use it.
- Game Center -- I don't really waste my time challenge people and can't really find any other purpose for this app.
- Stocks (I use notification center and never have the need to open it)
- Newsstand (I don't read magazines or books on my iPhone....its just too small for such things to read comfortably over period of time)
- Passbook -- I don't have any use for it yet...
 
I just leave the default apps where they are, though i would just hide them with the jailbreak other wise (which i do with some jailbreak tweaks which like to put there settings as an app.)

I thought that APPS could be rid of. Isn't the process simply pressing on the app itself until it shakes and an "X" appears on the corner of the app? Once you tap on the "X", it will tell you, any data associated with the app will be deleted. Or s this not the case?

I know that any apps downloaded will never disappear from a list of apps downloaded from the App store.

Mine is apps that can't be uninstalled, pre installed apps from Apple, the "Crapple".
 
For iOS 7.1, mine is called "Extras". I stuck it at the very end of my games folder which is a few pages long. Otherwise, I was just putting all my unused apps at the end of another folder like "Services".
