But is the speed diff between 1tb+ssd and 2tb+sdd enough to warrant purchasing a 2tb+ssd over a 1tb+ssd?

Look, the way I see things you really have nothing left to figure out - there is no mistake to be made - you can't go wrong with any iMac in your situation.

These aren't the qualms you are looking for.
 
I just received my iMac 27" Ultimate and the only noise coming from it so far are the 2 TB HDD and the DVD drive (much noisier). In comparison to my Win PC or my MacMini it is very quiet. I nonetheless sometimes dismount the HD altogether to avoid even the slight sound it makes. Yet, that would most likely apply to any other HD as well and is a luxury problem. So my 2c - go with the bigger HD if you can afford it. If you have a lot of money to spare and do not need top speed (e.g. for video editing), then get a good file server (NAS) and put it in another room.
 
My SSD+HDD 2TB Hitachi drive is silent. The only way I can hear if my iMac is running is by literally putting my ear to the case.

Spend more of your focus on capacity and less on the amount of noise the HD makes.
 
My 2TB is only audible if everything else in the room is dead silent (which is rarely the case). Even then, it's pretty darn silent, albeit it with a little bit of additional hard drive access noise whenever it's being actively used.
 
iMac 2011 HDD noise Hitechi

I have imac 21.5'' SSD 256 + 2 Tb Hitachi HDD. Hitachi HDD is for sure NOISY!! I mean not the access noise itself, but humming from the drive rotation. I am not sure whether the drive is normal, I am planning to visit Apple service.. But I hear a hi-pitched noise any time the drive is ON. The sound is not strong but for sure I can hear it very very well in a perfectly quiet room. It reminds a fan noise. Bt it's a drive for sure, the sound stops when I unmount it. I never was able to hear my fans even in games, for sure. You won't hear that sound in a noisy room though. But I am not happy with this sound at all.
