So with all of the talk about the updates in 2.0 does anyone know if MS Office (Word, Excel) attachments will be supported - and has Apple said anything about copy/paste?

They are now, at least to view from an email anyway. Did you mean for editing? My hubby sure hopes so.

MS are working on an application for the iPhone, according to an article I read on engadget recently.

I'd post a link, but, well, I don't have a copy and paste function.

Viewing those attachments is already supported. Editing them is not really practical on an iPhone.
