I paid for the 2.0 update in iTunes...
It did a short download...
Did a backup... I think...
The 2.0 update failed...
I plug it in and now it wants to do a RESTORE
I tried the restore and it also errors out with the following message

The iPod "iPod" could not be restored. An unknown error occurered (6).

Does anyone have any ideas?

I had the same thing with the 1.1.4 update for the iPod Touch. The solution was quite simple actually. Reboot your PC before doing a restore. After it has been rebooted, restore your iPod and proceed with the upgrade to 2.0 again. Apple has a KB about it:
