2 mac OS questions

These may be basic questions, but one is a nuisance I have lived with and the second is a curiosity

1. How do you / can you open multiple calculators


2. Does "Clear History and Website Data" in the Safari tab completely remove that history / Data / Cookies, or is there another folder somewhere that should be cleared too?
