Does that mean you get two independent monitors, i.e. they are not mirrored?
Yes, exactly. This is what I used before I realised that I can connect my second monitor via dell up2720q

would like to add that it works as 2 independent monitors via this adapter without issues. Currently using connection via dell (dell is connected to Mac mini , the second monitor, web camera, external drive and charge cable for air pods max are connected to dell) works fine, but 2 times since June I got UI freezes during MS Teams conference. Didn’t know the cause but assume the issue in ms teams and big sur :)

Sorry for the delay. I have the 2018 Intel mini. The adapter I tried was a promotional offer https://www.amazon.ca/Adapter-Conve...LDAY+dual&qid=1628277648&s=electronics&sr=1-2

The manufacturer states that it doesn't support extended display mode in macOS.
When I got it, HDMI was being a real PITA, but is now working just fine. When HDMI was not working, this splitter adapter gave me two greenish mirrored displays. Now that HDMI is working, connecting both displays to this splitter only provides output to one display, the other is reporting "out of range".
What I have is working, I am not overly concerned, but the adapter market place is certainly challenging.
How did the situation get resolved? A software update?

Yes. It's a Thunderbolt device. Thunderbolt can transmit two separate 4 lane DisplayPort 1.2 connections. A Thunderbolt 3 controller chip has a DisplayPort output and a Thunderbolt output that can also do DisplayPort Alt Mode. The Thunderbolt 3 to Dual DisplayPort or Dual HDMI adapter uses the DisplayPort output of the Thunderbolt controller for one display and the Thunderbolt output for the second display. That's why these adapters don't include a downstream Thunderbolt port.

The TB3 > 2 HDMI splitter I have didn’t work.
Right. That is not a Thunderbolt 3 to dual HDMI adapter. That adapter is a DisplayPort MST Hub that uses USB-C DisplayPort Alt Mode input instead of Thunderbolt. Thunderbolt 3 is a different Alt Mode for USB-C. macOS doesn't support MST for multiple displays.

I have two going....one with via HDMI and the other thru a displayport to USB C adaptor....Works great with one HUGE caveat...both monitors are Viotek 34" albeit one is a slightly newer version, both run at 3440 X 1440 max resolution. They look great, however, at that resolution everything is TINY. You can make the body of webpages in chrome or safari larger by clicking control and the + sign. That is nice and definitely helps webpages, but, there is no known way to increase the text size on menu bars or menus on any system window etc. Apparently, if you have an Apple retina monitor, there is a setting to increase font size while retaining your highest resolution your monitor can do but that option is not present on 3rd party monitors apparently. Not a huge deal breaker...yet anyway because everything else about it is sensational so far...

edit- whoops, I just noticed you said Intel mac mini...I have the M1 mini

M1 Mac's should be ably to do up to 2967x1242 HiDPI. Just need to be able to create a scaled resolution of 5934x2484 but the FAQ says you can only create scaled resolutions up to the native resolution of the display. https://www.madrau.com/support/support/faq.html
5934x2484 is the largest integer resolution that has the same ratio of 3440x1440 but is less than the 6016 width limit of M1 Macs (at least the limit in the driver, no-one has tried patching that limit). Anyway, that's probably off topic for this thread.
