Two features they really must incorporate:
1) To Do function for iCal - I don't know why they have to dumb down iCal like this. To Dos are the feature that I absolutely must have. Being able to whip out the Touch as I'm given an assignment would be perfect.
2) Being able to rate photos - Who has the time to rate all their thousand+ photos at home sitting in front of their computer all day? I rate my songs on the go, and I want to be able to do this on the go for pictures too.
