My watch unlocks my Mac fine until my wife walks in with her watch and then it fails and requires a password. We both have watches and MacBooks. Any ideas? (And no I can't get rid of the wife, she is a keeper.)

Do you share an iCloud account? If so that’s probably the problem. I have 3 people living in my household, all with Apple Watches and all with Mac unlock turned on on our respective computers. Never once have they interfered.
