Hell, I think my wife married me largely because I cook.

A few suggestions: Pepper-encrusted filet mingnon with a port-cherry reduction sauce served with blue cheese and carmelized onion mashed potatoes and some broiled green beans.

Or Chicken Kiev (pounded chicken breasts wrapped around a compound butter, breaded and baked until crispy) with a baked goat cheese salad.

Pick a good wine to go with the meal, and don't forget the dessert. Chocolate is always good, but since it's summer you can also go with fruits etc.

Pick something that will allow you to do most if not all of your prep well ahead of time so that you look organized and you aren't focused on the cooking instead of her.

I've got plenty of experience in this area, so go ahead and pick my brain if you would like.
 
Well, it looks like I'll definitely be making dinner of some sort then. I think I'm leaning towards possibly Chicken Alfredo, with a salad, and some kind of dessert...any good dessert ideas except for that eat n park ;)

O ya, I don't think my parents would be very happy if I whipped the wine out, haha.
 
Can't go wrong with chocolate usually. Fresh pound cake, strawberries and real whipped cream (not the canned crap) is also good this time of year.

Poached pears are good too if you're looking for something a little more on the healthy side (Not totally healthy you understand, but not chocolate cake with ganache on it).

Creme brulee is nice in the summer as well, you just have to have either an oven with a good broiler or a torch for the sugar top.

Or turtle brownies - brownies with caramel on top. Excellent, but not quite as elegant.

As mentioned, chocolate mousse is also quite good. I've got recipes with the traditional raw egg white, and also with gelatin if you're not into the raw egg thing.

mousse sounds good. and damn you mactastic for talking about such tasty treats while i'm sitting at work so hungry. damn you!
 
Personally I'd rather go with the raw egg white myself, but there are times when it's not appropriate (ie when you're serving young kids or the elderly or those with a compromised immune sysetm). I would be curious to see if applesauce would perform the same - let alone the taste factor - in a chocolate mousse.

Haha, I didn't read anything about chocolate mousse! I thought this was in regards to standard baking. For mousse you just use soft tofu.
