I paid for the $20 update, and I don't want to lose any features when downgrading to 1.1.1. What will happen when I jailbreak my iPod Touch - will I basically lose the $20 update?

They work fine with the Official Dev Team method of 1.1.3. You need to go to 1.1.1 and jailbreak it, then use Oktoprep, then update (not restore) to 1.1.2, then run the jailbreak for 1.1.2, then you need can run the 1.1.3 official dev team jailbreak from installer. It seems complicated, but as long as you have like 40minutes, you should be fine. I have rejailbroken my touch so many times and the Dev team one is the best because it does not break DRM and you can sync your purchased applications.
Note: you need access to iTunes 7.5 for Oktoprep to be successful because 7.6 breaks oktoprep =\. Not sure if there is a way around this yet.

Yea, you could do that, but iTunes does not recognize that you have the applications then, and you cannot sync email.
You can visit my guide. It's in my signature. Also when I bought my iPod Touch like 2 weeks ago it was a 1.1.3 out of the box and I jailbreaked it a lot. I didn't lose the normal 1.1.3 update, so if I would want to go back to normal 1.1.3 then I can since I'm guessing Apple just checks the Serial Number for the device and if it's in there | 1.1.3 + | list then you get the update for free. I also did all my jailbreaking on iTunes 7.6. After you OktoPrep to 1.1.2 your iPod will be in "Plug to iTunes" mode, the way that I got out of this was by downloading iNdependence and simply just opening the application up and letting it "Connect to iPhone" & "Disconnecting from iPhone".

Is there an advantage to being able to sync your mail if you're using a mail service (Gmail, .Mac, etc.) that uses IMAP?
I'm not really sure if there is an advantage. It does save you the trouble of having to type in all of your account settings on the touch though. And it stops iTunes from nagging you to update and solves the problem of iTunes trying to sync your apps and failing.
