I have the chance to snag a 2010 2.8 quad for around $800, I plan on swapping out the daughterboard to dual cpus, is $800 a fair deal?

Have you priced out the replacement board and heatsink/fans? This is not a cheap endeavor. Unless things have changed a lot since the last time I looked, you are almost certainly better off buying a dual proc machine in the first place.

Get a dual 5,1 straight away, don't do this upgrade by yourself. It will usually cost you more at the end.
