Apologies in advance for the noobish questions but I was curious if the new MBP's can support two external monitors? I would also like to know if the MBP's will ship with Lion when Lion is released in the summer?

Of course they will ship with lion once it's released, and yes, if you can find a displayport 1.2 compatible pair of monitors that allow daisy chaining.
