I've run various tests on different Mini Server configurations such as , 4 GB RAM + 750 GB 7200 RPM HDD, 8 GB RAM, 4 GB RAM + Vertex 3 SSD, 8 GB RAM + Vertex 3 SSD.

The post can be found by following the link below since it compares the 2011 MBA and 2009 MBP as well so I wasn't sure where the best place to put it would be:

As no-one has commented, I just wanted to say thank you for posting such a detailed test - very interesting.

    I've been comparing my 2011 Air (13" i5 128Gb) with my 2011 mini Server (256SSD (Apple/Toshiba), 750HD (Apple/Hitachi), 8Gb ram) using the Photoshop Speedtest: http://clubofone.com/speedtest/

Using their recommended settings I get:

    Air: 29 seconds
    Server: 17 seconds

If I bump their test file up to 80 megapixels I get:

    Air: 15 minutes
    Server: 3 minutes

I'm about to swap the mini Server for the mid-mini with AMD graphics, and this test has persuaded me to get 16Gb of ram. (That said, it's quite possible I've misinterpreted the results :))

Your results make sense. The Air is great for basic stuff, but when you start doing more serious and intensive stuff, then the quad processor and extra memory help a lot. The majority of users do not such intensive things though.
