The problem I am having is once I get to the Boot Screen I see the EFI Boot drive (Linux Mint 20.1), Windows drive and another EFI Boot Drive. If I select that drive (last EFI Boot drive) the Mini just locks the mouse and keyboard and I have to shutdown the Mini via the power button. I was able to install openSUSE 15.2 Leap on the same Mini but I wiped the USB drive to install Leap 15.3 (RC). I had the exact same problem with Leap 15.3 RC so I thought maybe it was the RC giving me the problem. I tried installing Leap 15.3 official release and I have the same problem. Any ideas?

I thought well maybe I have a bad ISO image. So I took it over to a Windows laptop and it boots and installs just fine.
 
i doubt it's your Mac. it's probably OpenSUSE being stupid. from what i can guess you have Mint installed and that works ok? why not stick with that?

from experience i also know that Manjaro works well on Mac's. i'm typing this from my macbook pro with Manjaro booted.

Yeah, I did just that. I do prefer OpenSUSE because for some reasons it tends to run cooler. I tried getting MBPFan to work but it would not manually change the fan speed so it's stuck on automatic.
