I recently purchased a 2012 MacMini i5 I need to connect 1 40 inch LED TV that has all sorts of connections and 2 LED Monitors witch both have VGA, and DVI inputs. How can I do this?

The Mac mini only has two video outputs, thus you are limited to two external display devices, unless you involve a video splitter (mirrors image, thus what you see on display 1 is also what you see on display 2) or a Matrox Triple/Dual Head2Go.

I need to be able to multi task in all three monitors (no mirroring). Will the Matrox Triple head do this?
I'd like to use the HDMI out for the LED TV, and split the thunderbolt but again I am not looking into mirroring.

There are USB monitors - go to Amazon and input 'USB Monitor'.

There are 14" portables, a 16" portable and a 22" - check the reviews and search for 'MAC' - you'll see there are some good results out there.
