Since macOS Monterey isn't officially supported on this mac, I was wondering if anyone here was able to successfully get it to install using the OpenCore Legacy Patcher method?

I am curious to know how it went and if it was straight forward or if it's a complicated process. And most importantly if it runs well on the machine? I don't see no reason at all why macOS Monterey shouldn't run on a 2015 Macbook 12".
 
I have “installed” macOS Monterey on my MacBook Air ( early 2014) and works fine.
I simply copied the installed OS from a supported Mac and add MacBookAir6,2 info to PlatformSupport.plist .

So I guess you can install too.

Go with Opencore legacy patch or you can use “my way “ ...

Could you please show me where to find that file? Also can you just update from Big Sur to Monterey using the downloaded iso file without having to put it on a USB drive? My 12" macbook doesn't have any usb ports, and even if I were to use an adapter, it means i would have to give up being plugged directly into a power outlet. Which won't work for me, since my battery can't even hold a charge. So I need that only port to be plugged in to power.
 
You need an adapter with at least one USB-C to power the Mac and one USB-A. That allows you to install MacOS with an USB and don't die with the charge requirement.

If you don’t have another Mac with an installed Monterey OS , you have to use Opencore Legacy Patch to install.

BTW if you can copy the installed Monterey OS to an external USB Disk , you can boot from it but you have to add in System/Library/CoreServices/PlatformSupport.plist the info about your MacBook.

Easy tips : you can use the PS.plist from Mojave or Catilina and copy/overwrite on that folder /S/L/C ...
