any one able to run parallels or VMware on a 2916 MacBook or other suggestions for running an instance of Linux?

I noticed a the store Final Cut Pro was on there and ran decently well...how well would a VM app work?

I had a good laugh tat that.

I run Ubuntu in VM with no issues. In fact sometimes I run Windows 10 and Ubuntu at the same time with no issues but with nothing terribly CPU intensive. I gave them each 2gb of ram. It doesn't feel slow with a 2015 1.1GHz at all.
 
I would expect it to, as I have been running a Linux VMs (under both VMWare and Virtualbox) since 2008 on MBA's. My 2011 11" MBA was doing it very well. The 2008 version was doing less well, but still got the job done... So much better spec'ed 2016 hardware should do...
