The SSD options for the 2017 5K iMacs seem to be $100 overpriced on the Radeon Pro 580 configs when compared to the other 5K configs.

iMac 5K with Radeon Pro 570
step up from 2TB Hybrid Drive to 512GB SSD = $100
step up from 2TB Hybrid Drive to 1TB SSD = $500

iMac 5K with Radeon Pro 575
step up from 2TB Hybrid Drive to 512GB SSD = $100
step up from 2TB Hybrid Drive to 1TB SSD = $500
step up from 3TB Hybrid Drive to 512GB SSD = $0
step up from 3TB Hybrid Drive to 1TB SSD = $400

iMac 5K with Radeon Pro 580
step up from 2TB Hybrid Drive to 512GB SSD = $200
step up from 2TB Hybrid Drive to 1TB SSD = $600
step up from 3TB Hybrid Drive to 512GB SSD = $100
step up from 3TB Hybrid Drive to 1TB SSD = $500

What do you think? A pricing mistake by Apple, or do you know of an explanation for the $100 difference?

With some insight and experience with corporate pricing, it is almost certainly not a mistake. Too many rounds of analysis and approvals. Something else is driving the $100 upcharge/difference for the 580.

The 570 and 575 models come with 1TB fusion as standard, so you're comparing the price of two build-to-order options (add 2TB fusion vs. add 512GB SSD)

The 580 model comes with the 2TB Fusion as standard so you're comparing the base version with a build-to-order.

My guess - there's effectively a sort of flat-fee "build to order" surcharge for any non-base configuration. With the 580 you pay for that as part of the upgrade from base to 512GB SSD. With the 575/580 you "paid" that when you chose the 2TB so, moving from that to the SSD, you just pay the difference.

Just a theory.

Also, bear in mind that when you order a BTO, the Apple Store probably won't literally have the factory "build it to order" if they can possibly avoid it: rather, they'll try and stock a mix of the most popular BTO options ready made. So there may be a whole complex suppy-and-demand curve built into those prices. I'm sure there's an app for that.
