Would like to upgrade my ram in my 2018 Mac mini. Curious I know OWC and iFixit sells kits for this upgrade. Which sticks are better if any? Any specs what makes them different? Which should I go with?

Thanks!

It's better to buy your own because you end up paying their markup regardless of who they buy their memory from. I went with the Corsair Vengeance sticks (2x16GB) kit for under $140 from Amazon.

A related question, if anyone here knows: does upgrading one’s own RAM on a 2018 MacMini void the warranty? If so, does having it installed by an authorized repair center preserve the warranty?

NO! It's only an issue if you break something and Apple or an Authorized Apple service center says it was "YOU" who broke it. If something happens you can always put back the original memory and claim the 5th amendment or as Sgt Schultz from Hogan's Heroes used to say. "I know nothing".

It's really easy to do once you see the video on how it's done. I suggest finding the iFixit and 9to5mac YT videos, watch them both and you'll see how easy it really is. And the reason I say watch both videos is because each one has their way of doing things in a slightly different way. But my advice is to just "TAKE YOUR TIME". It took me about 30 minutes. If something doesn't feel right, don't force, just watch the part of the video again where you're stuck.
