I’m on the verge of purchasing a 2018 Mac mini and I could reaslly use some advice on whether to go with the six core i5 or i7 processor.

The machine will be used solely for video and photo editing with only one application running at a time.

Also, does it make sense to spring for 10 Gigabit Ethernet ($100) for furure-proofing? Given that I’m not running any kind of network, I don’t think I have any immediate need for it.

If you're going to be doing 4k, you want "the most you can buy" for whatever budget you have.
Certainly the i7...
 
Funds not being limitless, I’m inclined to spend money on an eGPU rather than on an i7. Thoughts?

Even if the options were price equal, they are not time equal. Only one can be added a year from now.

If you can wait a month, there are bound to be early adopters trying your exact use case who will give actual results, then you can make an informed decision. The only safe option now is buying everything.
