My space would work better for 21.5 but 27 could squeeze in. It might be to "tall"
I might add a 2nd 1080p monitor on the side

With these two options, what do I gain, what do I lose? I have light usage (email, documents, light photo/ video shot on phone, moderate gaming (Fortnite)
we currently have a Dell desktop but I'd like to integrate with my MacBook, iPhone, iPad, watch, etc. We have 2 TB cloud storage.

Education discount for $2,244 on the 21.5"
  • 3.0GHz 6-core 8th-generation Intel Core i5 processor, Turbo Boost up to 4.1GHz
  • 16GB 2666MHz DDR4 memory
  • Radeon Pro Vega 20 with 4GB of HBM2 memory
  • 512GB SSD storage
  • Magic Trackpad 2
  • Magic Keyboard with Numeric Keypad - US English
Only $25 more for the 27" $2,269 -> (would buy my own RAM later)
  • 3.7GHz 6-core 9th-generation Intel Core i5 processor, Turbo Boost up to 4.6GHz
  • 8GB 2666MHz DDR4 memory
  • Radeon Pro 580X with 8GB of GDDR5 memory
  • 512GB SSD storage
  • Magic Trackpad 2
  • Magic Keyboard with Numeric Keypad - US English

This is what my wife bought who is school teacher. She is very excited! Unless space is a issue get the 27inch. The next to top model of the iMac 27 inch seems like the sweet spot where price and power meet.

She got same as you listed:
