2019 iMac 27" Retina Problem

I wonder if the experts on here can suggest hints on nailing this problem down. I bought it with 16GB of memory and fitted 64GB of OWC memory. I do a lot of photography and use Capture One Pro editing software which is quite a heavy user of everything. It crashes occasionally when using Capture One but I'm 95% sure that's not the issue. I've switched back to the original 16GB of memory and it still crashes occasionally. I've contacted OWC and they gave me a memory test which passed OK. It also occurs when copying files to a SSD which it did last night several times. It's been happening on and off for months on and off. I'm suspecting a heat problem now though the fans don't appear to be noisy.

Can anyone suggest a course of action to nail it down?

Are you on Catalina 10.15.4 and have you seen this known issue with copying files?

Yes I am on 10.15.4. I hadn’t seen that bug report. That might explain some of the problems I’ve been having. Any idea what a good monitoring package to monitor temperature and memory usage?
