Is there a thread or list anywhere of third party manufacturers who have either covers or cases for the 2021 iPad Pro 12.9" models? When I visit my "go-to" places like Incipio or Sena, they all seem to not have anything in their lineup for the 2021 iPads yet.

I bought this one on Amazon. It’s a copy of Apple‘s Smart Folio. It’s actually very nice and cheap enough to give me time to decide if I want something more expensive, as nice as this is for $25 I would not pay $99 or whatever it is that Apple’s version sells for.

It looks like the same as I got, less expensive. They’re probably all made by the same manufacturer and marketed under different names. If you don’t mind spending a little more money zugucases.com makes the best iPad cases I’ve seen. I’ve used them for most of the iPads I’ve owned. I didn’t order one this time because I wanted a keyboard case and they’re expensive enough so I looked for something cheaper. The Zugu cases have run about $69 for the big iPads.

Following. The new iPads are different depth than the others so new cases will need to be made
The folios which just attach to the front and back of the device, they don’t overlap the screen edge or lip will be unaffected. The .5mm increase in depth will not affect them. The cases that surround all edges requiring the iPad to be fitted inside may have tolerances so narrow that .5mm will be an issue. Many others won’t be that tight and won’t have a problem.
 
My husband bought the Zugu case for his 2018 iPad Pro and it's very nice. Good balance of slim and sturdy. You can adjust the angle of the stand much more than most cases and it uses magnets to hold it in place. No more having the case flop down when moving the device. Their version for the 2021 iPad Pro isn't out yet, though.
