Hi, I own the 24" Apple LED Cinema Display and text on the monitor is just large enough. Won't text on the new 27" Display be much smaller with its higher resolution?

What text specifically are you referring to?

Also, you should make use of control+scroll zooming. I do it all the time.
 
The PPI is quite a bit higher on the 27 inch. Go check out an iMac and see if you like it. I was very obstinate when I first got my iMac, and swore that I didn't like it. A couple months ago, I checked out a 24 inch at the Apple Store and it was amazing how huge everything felt to me on screen. The extra real estate is nice, but you do have to adjust to it. It is a noticeable difference. In the future it shouldn't matter. Hopefully 10.7 will have resolution independence fully working.
 
if you find it to small, just increase the overall system font, or as already stated, use the zoom feature
