Recently acquired a 27" thunderbolt display really cheap (free! 😁), I i read that it will only work with thunderbolt enabled devices.
The display works well with my 2012 MPB, but was wondering if I could get it to work with my 5,1 cMP - the GPU is a Sapphire RX480 Nitro+

You need a Thunderbolt add-in card, run a DisplayPort cable from the RX480 to the card and hook up the display to the Thunderbolt card.

The Gigabyte GC-TITAN RIDGE can be used in your Mac Pro (LINK). It’s a Thunderbolt 3 card so you also need a Thunderbolt 1/2 to 3 adapter (LINK).
