if i have the 3.0 gm (which i do) do i need the official 3.0 update being released today? and if so, how would i go about getting it, considering my software version already says 3.0? is there a way to put back on 2.2.1 if necessary?

Once the firmware is officially released.. You can just do a regular restore. iTunes will download the "official" 3.0 and install that.

if i do the regular restore.....can i do it from a previous back up or should i just start again from scratch?
 
So can I download the "official" 3.0 OS when it drops or do I technically already have it with the GM? Reason I'm asking is because the GM has been running a little slow for me so I wanted to download the public version. Anyway to do so?

GM (in theory) should be the same bit-for-bit as the public version. Otherwise they wouldn't have called it GM.

But if you want to do this, delete the copy on your machine (the "GM"), connect to iTunes, and click Restore. This will download and install the copy from Apple's servers. (Of course, you have to wait until the "public version" is online to do this).
