I had read before that the MBP with the M5 Pro would support two external displays. But I just ordered one, and Apple says it supports three external displays:
  • 15-core CPU, 16-core GPU, 16-core Neural Engine​
  • 48GB unified memory​
  • 1TB SSD storage​
  • Standard display​
  • 96W USB-C Power Adapter​
  • U.S. English Backlit Magic Keyboard with Touch ID​
  • Three Thunderbolt 5 ports, MagSafe 3 port, 3.5 mm headphone jack, HDMI port, SDXC card slot​
  • Support for up to three external displays
  • Accessory Kit​

Is this new?
 
The M5 (and M4 Pro) supports 2 external displays. The M5 Pro, according to Apple's official tech specs, supports 3 external displays. I don't see any reason not to trust Apple's published specs on this.

Yep that is a big change this year with the Pro processor. Will save a bunch of money for those who have a 3-display workstations now that we don't need to buy the Max chip. Another great thing with the M5 Pro is that you can get 64GB instead of 48GB, which was the upper limit for the Pro last year. Overall, a great year for the Pro chip buyers.
